How fast can we get SOC2 Type I?

Type I in 60-90 days is realistic for a 10-30 person startup with reasonable starting hygiene. Type II requires an observation window, so 6-9 months total.

Should we use Vanta or Drata?

Vanta is easier to start with and has better integrations with common SaaS tools. Drata is more rigorous and better for environments that need depth. Either is fine — the platform isn't what passes the audit.
